Description/Taste
Yellow Stone. White Satin. Purple Haze. Black Knight. Nantes. Atomic Red. Carrots of another color make up this eye-catching delicious heirloom mix. Tender and sweet, this tasty bunch of cute baby carrots just two to three inches long makes a hit when added to an array of culinary creations. Carrots are best marketed without greens as greens rob carrots of valuable moisture and nutrients.

Nutritional Value
Low in calories, carrots provide an excellent source of Vitamin A and beta carotene. As a carrot matures, its natural sugars are stored in the cells of its outer layer.

Applications
A favorite of chefs! Ideal for adding color and great flavor to salads, slaw, stews, soups, casseroles and, of course, vegetable medleys. Steaming is best to preserve color, nutrition and fresh flavor. Simply add a splotch of butter for a pretty side dish. Make a colorful carrot cake! Slice for appetizer and hors d'oeuvre trays. Cut into strips as a healthy garnish for most anything. To preserve color, serve whole and do not peel. Simply scrub with a vegetable brush under cold running water. To store, refrigerate in a plastic bag or keep in a cool dry area up to two weeks to ensure quality and flavor.

Carrots were originally purple, however, other colors such as red, white and yellow also appeared in Asia thousands of years ago. About 200 years ago, the first orange carrots were cultivated in the Netherlands and the Royal House of Oranje is credited for the carrot's popularity.
