A sign of the changing times, picking and packing apples are no longer the chores of apple farmers. Instead, multiple apple farmers go together and employ packinghouses. Only a very few still do their own picking and packing for the marketplace.
Description/Taste
Round to oblate and aromatic, Honey Crisp apples have a yellow-gold background generously brushed with vibrant red. Characteristic shallow dimples and numerous small lenticels cover its surface. Lenticels are the pores of the apple that allow the fruit to "breathe". Having an exceptionally juicy and crisp texture, maturity affects this apple's good taste. Generally super sweet, the flavor can vary from mild to fairly robust, depending on its stage of growth.
Nutritional Value
An apple has no cholesterol and contains pectin, a beneficial fiber. This dietary fiber may actually work to reduce the body's cholesterol level and is claimed to possibly help prevent heart attacks. Pectin also slows glucose metabolism in diabetics. Apples contain potassium, which may reduce the chances of a stroke and have a trace of boron believed to build bones and to increase mental vitality. Apples offer a small amount of vitamin A and vitamin C and have only a trace of sodium. An average-size apple contains about 80 calories. Unpeeled apples provide the most nutritional benefits. Eating five daily servings of fruits and vegetables lowers the chances of cancer. A recent study found that eating nine or ten daily servings of fruits and vegetables, combined with three servings of low-fat dairy products, were effective in lowering blood pressure.
Applications
An all-purpose apple in the kitchen, the Honey Crisp makes delicious pie, sauce, cobblers, kuchen, muffins, cakes, cookies, quick breads and tarts. This apple freezes nicely and may be dried. It especially loves to contribute its great flavor and texture to fresh fruit salads. Sliced or cut apples stay white longer if put in a bowl of water with two tablespoons of lemon juice. To store, keep apples as cold as possible in the refrigerator. Apples kept at room temperature become mealy and mushy.
Geography/History
The New World may have already had a small apple population of its own but when the Pilgrims came, they brought apple seeds, stock and cuttings from their orchards which grew many new apple varieties in America. Introduced in 1991, this delicious apple was developed from a 1960 cross of Macoun and Honeygold apples at the University of Minnesota and grows larger than either of its two parent apples. Its one parent, Honeygold, is a cross between Golden Delicious and Haralson. Its other parent, Macoun, a cross between McIntosh and Jersey Black, is known for its exceptional aroma and was developed at the New York State Agricultural Experiment Station in Geneva in 1923. Harvested about one week after Gala apples and about two and one-half weeks before Red Delicious, Honey Crisps are ready for harvest 130 days after full bloom.
