Description/Taste
Firm and heavy for its size, turban squash is a striking bright orange, trimmed in a dark ivy green color. At its blossom end is a turban-like cap, thus its name. This very ornamental variety can measure ten to fifteen inches in diameter and even larger. Wrapped in a thin but hard shell, the fine-textured orange flesh can vary from mild to sweet.
Nutritional Value
Winter squash is an excellent source of vitamin A and offers a good source of vitamin C, calcium, fiber, and potassium, plus notable amounts of protein and carbohydrates. About 50 calories are in four ounces of baked squash.
Applications
Bake, roast, steam, sautee, or puree this squash. To store, keep whole squash in a cool dry place. Wrap cut pieces in plastic; refrigerate up to one week.
Geography/History
A member of the Curcurbita maxima genus, turban squash also grows in a dark green color accented with grayish markings or spots. Squashes are determined mature when their side that touches the ground has turned the usual color of the squash variety.
