Cut just above the soil, MicroGreens are harvested one to two inches tall and seven to twenty-one days after planting when their very first leaves appear. Tiny seedlings of herbs and greens, nutritious MicroGreens are today’s popular very gourmet garnish and flavor accent offering a multitude of colors, textures and distinct flavors. Grown in soil or soil-like materials, MicroGreens depend on sunlight and air circulation to flourish, unlike sprouts that grow in water and require a dark environment with high humidity.

MicroGreen Cilantro produces very tiny leaves that deliver a very big cilantro flavor.

Nutritional Value
MicroGreens are a dieter's delight! Fat-free and cholesterol-free, one cup has just 5 calories, plus offers vitamin A, vitamin C, calcium, iron, potassium, a trace of protein and dietary fiber. Cilantro is an excellent source of thiamine, zinc, dietary fiber, vitamin A, vitamin C, vitamin E, vitamin K, calcium, iron, magnesium, phosphorus, potassium and lutein. Cilantro has been used as a folk medicine for the relief of anxiety and insomnia in Iranian folk medicine. Experiments in mice support its use as an anxiolytic.

Applications

The fresh leaves are an ingredient in many South Asian foods, Chinese dishes and in Mexican salsas and guacamole. Coriander has been used as a folk medicine for the relief of anxiety and insomnia in Iranian folk medicine. Coriander is believed to be named after "koris", the Greek word for "bedbug" as it was said they both emitted a similar odor. The Chinese used the herb in love potions believing it provided immortality. Coriander is one of the herbs thought to have aphrodisiac qualities. Cilantro is one of the world's oldest spices. Spanning from 5000 BC to modern times, it has been used medicinally and culinarily around the world. China, India, Egypt, Greece, and Rome all used it in ancient times for both its seed and leaf. It has been used to ease labor pains as well as to reduce flatulence. Records report Cilantro coming to North America by the later 17th century.
