Thanks to controlled climate packaging and air travel, berries are now much more available as they are imported from New Zealand and Chile. These countries are experiencing summer when the United States is in the winter season. Fruit has been an important part of the culinary world for years on every continent. Description/Taste
Eye-catching and actually a milder flavored version of the red raspberry, the plump golden raspberry offers somewhat of a creamy flavor that some describe as a blend of a banana, an apricot and a raspberry. These little berries are deep yellow when immature and develop a rich amber gold color when ripe and turn red-orange when overripe. Very gourmet, chefs love this berry's unusual color that gives an aesthetic twist to their specialty desserts and sauces.

Nutritional Value
An excellent source of vitamin C and dietary fiber, cholesterol-fee, sodium-free and saturated fat-free raspberries contain some vitamin A, calcium and iron. One cup has about 60 calories. Eating five daily servings of fruits and vegetables lowers the chances of getting cancer. A recent study found that nine or ten daily servings of fruits and vegetables with three servings of low-fat dairy products were effective in lowering blood pressure.

Applications
Enjoy this golden berry treasure simply sprinkled with powdered or granulated sugar and topped with whipped cream. Make luscious jellies, jams, preserves and sauces. Freeze pureed fruit to serve as an elegant sorbet. Toss whole berries in mixed green salads for flavor and color. Add pureed fruit to white vinegar; drizzle over fruit, vegetables or lettuce greens. Make a succulent filling for tarts and mixed berry pies. Serve as an attractive edible garnish. Extremely perishable, this seriously fragile fruit must be used immediately after purchase for optimum flavor and texture. Keep berries dry; do not wash until just before use. To freeze, lay in a single layer on a cookie sheet or platter. Place frozen berries in plastic bags or covered containers; store in freezer. Frozen gold raspberries lose their delicate texture.

Geography/History
Gold raspberries are a mutation of red raspberries and the only difference is their color. Like the red variety, cold-hardy gold raspberries thrive in the cool climate of the Pacific Northwest. A bramble fruit and a cousin to the blackberry, raspberries at one time flourished growing wild in North America. Today nearly all varieties of raspberries are commercially cultivated. In the United States, Washington State is the leader in raspberry production followed by Oregon and California. Having an uncertain origin, this remarkable yellow-colored berry didn't make its public appearance until the eighteenth century. It is said that this gold variety, often an orange color and sometimes called the "salmon" berry, is not named due to its color, but because Native Americans of the Northwest loved to eat this golden berry with salmon roe.
